Aam ki Lounji

Aam ki launji is basically Rajasthani chutney made by cooking raw mango pieces with basic Indian cooking spices and sugar. This is the best way of enjoying the tangy taste of raw mango. Aam ki launji is a very quick recipe which can be prepared in just 15 minutes.

Ingredients for Aam ki Launji:
  • Raw mangoes – 2 large peeled and around 2 inch sliced mango pieces
  • Oil - 2 tablespoons
  • Jaggery – 1/2 cup powder, grated
  • Turmeric powder (Haldi) – 1/2 teaspoon
  • Red chilli powder (Lal Mirch) – 1/2 tablespoons
  • Salt – 1 1/2 teaspoons or as per your taste
  • Fenugreek seeds (Methi)  -  1/2 teaspoon
  • Onion seeds (Kalonji) - 1 tablespoon
  • Fennel seeds (Saunf) - 1 tablespoon
  • Water - 1/4 cup 


Step By Step Recipe:

1.      Heat the oil in a pan.
2.      Add 1/2 tsp Fenugreek seeds (Methi) and allow it to turn red after methi add 1 tbsp Fennel seeds (Saunf), 1 tbsp Onion seeds (Kalonji).
3.      Add chopped mango pieces.
4.      Add Salt, turmeric powder and red chilli powder.
5.      Mix all the spices with mango pieces.
6.      Now add 1/4 cup water and cover the pan with lid till the mangoes will get soft.
7.      Check the mangoes and add 1/2 cup jaggery powder or grated jiggery. You can also use sugar instead of jiggery. As jaggery is a very good source of iron I am using jiggery here to enhance the nutritional value.
8.      On low flame now mix the jiggery properly with the mango pieces, in some time jaggery will leave water and the consistency of the chutney will become thin.
9.       Let it cook for five more minutes.
10.   Turn off the flame and allow it to cool.

Tasty delicious chatany is ready to eat. You can refrigerate it and use it for 10-15 days.
